Zucchini Protein Brownie

Zucchini in the dessert? How does it work??


I am going to tell, it works...pretty well! This recipe is so delicious, moist, healthy and what I like the most, and I am so sure you, busy lady, loves: easy to make! Yesss!


This recipe is also gluten-free, lactose-free, high in protein and sweetened with natural sweeteners.




Anyway, I have to say. This is the BEST BROWNIE I've ever eaten in my life. Believe me, you will never eat a tasty brownie like this one and at the same time not feeling guilty for eating it. Oh, and the sweet smell that stays in the house is just amazing!


Ingredients:


  • 2 cups grated zucchini (I used 2 medium ones) - shredded and squeezed of excess liquid

  • 1 scoop chocolate protein - I used Organifi Protein. Buy here and get 15% off with my code: RITAA

  • 1/2 cup peanut butter

  • 1/4 cup dark chocolate chips

  • 1 banana

  • 1 egg

  • 1/4 cup maple syrup or raw honey

  • ½ teaspoon baking soda

  • 2 teaspoons vanilla extract

  • 1/2 cup walnuts




Instructions:


Preheat the oven to 350 F.


Line a baking pan with parchment paper.


In a blender blend all the ingredients - except the zucchini, chocolate chips and walnuts - until well combined.


Transfer this batter to a bowl and stir in the zucchini, chocolate chips and walnuts. Mix well.


Bake for 35 minutes, until a toothpick inserted into the center comes out clean.


When ready, wait about 10 minutes to cut into pieces.
