Zucchini Fritters

Oh my, what a great yummy and super healthy recipe! One of the favorites at home, approved by adults and kids (!), these zucchini fritters are also easy to make, taking 20 minutes maximum. ;)

You can eat them just like that or add a delicious yogurt sauce made with cucumber. Just blend plain yogurt (you can try lactose free too) and 1 cucumber, salt and pepper. Mmmmm!

For 6 fritters


2 zucchinis

1 egg

1 cup parmesan cheese

1 cup chopped spinach

Himalayan salt

Olive oil

4 tablespoons any healthy flour (I usually use rice or garbanzo flour)

How to do:

Grate the zucchinis in a bowl and add salt to taste and leave it for 10 minutes.

After 10 minutes, squeeze the zucchini with your hands to get rid of the water and move to another bowl then add the egg, cheese, spinach, flour and mix all together.

In a frying pan, add 1 tablespoon of olive oil and let it heat for 1 minute.

Get 1 tablespoon of the mixture and put into the pan molding it in a round shape. I usually make 3 fritters at a time. Cook them 3 minutes in each side.

Eat right away! ;)
