Vegetables Tian

Easy, delicious and inexpensive meal for your entire family or a dinner for friends is the vegetables tian! You just need some veggies (also you change the veggies as you like) and to be lactose-free, you can choose a lactose-free cheese or a veggie cheese.

Ingredients:

1 tablespoon of olive oil

1 medium onion

1 tablespoon of minced garlic

1 or 2 potatoes (I used the red ones which were small, so I had to use 2)

2 tomatoes seedless

1 zucchini

Salt and pepper

1 cup shredded parmesan cheese


How to do it:

Preheat the oven (400 degrees).

Slice the onion and mince the garlic and then sauté them in a pan with olive oil for about 7 minutes.

At the same time, slice the vegetables.

Get a baking dish and spray with non-stick spray (I used a coconut oil one). And, for the first layer, place the onions and garlic, then place the sliced veggies vertically making your own colorful pattern.

Sprinkle salt and peper and if you feel like, a little bit of olive oil.

Cover the dish with foil and bake for 40 minutes or until they get tender. Then, remove the foil and top with the cheese you chose and bake for another 20 to 30 minutes or until the cheese is golden brown.
