The Best Carrot Cake


One of the yummiest cake in the world (at least for me lol) is the carrot cake! And I am always searching for a healthy version of this delight cake. But this one is the best so far!!


I have already posted one good carrot cake recipe here on my blog in 2015 , but this new one exceeded all the expectations. And I highly recommend to use as frosting (or even to fill the cake), my healthy Nutella recipe. Recipe here! Or just melt dark chocolate in a double boiler, a little butter and coconut sugar and that's it!

Ingredients:

  • 3 large carrots cut and peeled

  • 3 egg

  • 1 ½ cup coconut sugar

  • A pinch of sea salt

  • 1 cup melted coconut oil or olive oil

  • 2 ½ cups almond flour or any other gluten-free flour

  • 1 tablespoon baking powder


How to make:

Pre-heat the oven to 350ºF.


Mix the flour, salt and the baking powder in a bowl.


Mix the rest in a blender and blend it until becomes a homogeneous batter, like 4 minutes.


Mix the 2 batters together.


Grease a cake springform and pour the batter.


Bake in the oven for 45-50 minutes.


For the frosting I used my healthy version of Nutella, bee pollen and shredded coconut.
