What do I love about this soup?
Besides being delicious with a hint of ginger spiciness, the mix of ingredients of this soup boosts your immune system and improves your digestion (which in the end helps the immune system too).
Also, it has 2 more other amazing ingredients, full fat coconut milk and chicken bone broth (or you can use vegetable broth if you are vegan or vegetarian), good sources of fat and helps fight the inflammation.
Here is the recipe:
4 cups peeled sweet potato, cubes
1 big onion, sliced
2 garlic cloves, crushed
2 tablespoons grated fresh ginger
2 tablespoons coconut oil
1/2 teaspoon any mineral salt
1/2 teaspoon black pepper
2 cups chicken bone broth or vegetable broth
1 14-ounce can coconut milk, full fat
Saute the onion with coconut oil for about 6-7 minutes, until it begins to caramelize and get golden brown.
Add the garlic, ginger, salt, and black pepper and cook for more 1-2 minutes.
Add the sweet potato and cook for about 5-6 minutes, until the sweet potato gets soft, then add the broth and let it boil.
When start boiling, reduce the heat and cover the pan with the lid and let it cook for 15-20 minutes.
Check if the sweet potato is all cook and pour in a blender and blend well for about 4 minutes. Be careful because it will be hot!!
Return it to the pan and add the coconut milk, stir a little and check if it needs more salt and black pepper. Done!
