Easy because you just have to mix the ingredients and fry the bananas. Healthy because is sugar free and with good fats and chia seeds, this superfood which is at the same time, carb, fiber, protein and fat! And delicious because…well, how not to be, right? 😉
Let’s make it!
Ingredients (for 5 cups or 1 big bowl)
1 e ½ cup coconut milk (full fat)
8 tablespoons chia seeds
1 tablespoon vanilla extract
2 cups raspberries, thawed
If you want a little bit sweeter, you can add maple syrup (2 tablespoons) or stevia (1 tablespoon).
3 bananas, sliced
How to make:
Place the ingredients for the pudding (except the raspberries and chia seeds) in a blender and blend. Starting on low and increasing to high speed until the mixture is completely smooth.
Then add the thawed raspberries and blend on low just to combine.
Stir in the chia seeds with a spatula.
Pour the chia pudding into cups or the big bowl. Leaving a space for the bananas.
Refrigerate 6 hours or overnight for the chia seeds to thicken the pudding.
When going to eat, fry the banana with cinnamon and coconut oil as serve on the top. Mmmmm!
