Persimmon Pie With Healthy Caramel

Some people love persimmon. My grandma is one of those big fans! Some people never heard about it!


But persimmon is a delicious fruit and great to puree and use for different recipes.


This recipe is amazing! Its flavor is so unique that I can't even describe it. And the combination with a healthy version of caramel....mmmm..even better.




Here it goes!


Healthy Caramel

(make it before the pie)


  • 2 cups pitted dates

  • 1 cup date soaking water (from the dates that you will soak)

  • 2 cups full-fat coconut milk

  • 2 teaspoons pure vanilla extract

  • ¼ teaspoon Himalayan Pink salt


Instructions:


Heat around 6 cups of water - do not boil it.


Then soak the dates with the hot water for around 1 hour.


After soaked, drain the water but keep 1 cup of the water and blend all (soaked dates + 1 cup date soaking water) on a food processor.


Blend until is well mixed.


Preheat a large pot over over medium heat. Then add this mix of dates and let it caramelize for 7-10 minutes, always stirring.


Turn the heat to medium-high, always making sure it will not get burn.


Once the mix of dates is caramelized, add the coconut milk and stir continuously.


Then depending on the consistency you want, let the caramel simmer and bubble over medium to medium-high heat for 10-20 minutes. Always paying attention to not get burn!


After is ready, remove from the heat and add the vanilla extract and salt.


Persimmon Pie


Pie Crust Ingredients

  • 1 1/2 cups almond flour

  • 2 Tablespoons oat flour

  • 1/4 cup coconut oil

  • 3 Tablespoons maple syrup

  • 1 teaspoon vanilla extract

  • 2 pinches sea salt


Filling Ingredients

  • 1 1/2 cups Fuyu persimmon puree – around 5 persimmons (I found a local persimmon puree)

  • 1/2 cup coconut milk full fat

  • 1/4 cup maple syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • 1 teaspoon ginger powder

  • Almond slivers for decoration

Preheat oven to 325F.


Mix pie crust ingredients together in a mixing bowl using your hands.


Use coconut oil to grease the round pie pan.


Then press the pie crust dough into the pie pan, and work it until its even.


Bake the pie crust for 10-12 minutes.

While the pie crust is baking, blend the all the filling ingredients in a high speed blender.


Pour into the baked pie crust and bake pie for 25 to 30 minutes.


Let it cool for about 10 minutes and then add the healthy caramel on the top and you can decorate with almond slivers.
