Healthy Chocolate Ginger Ice Cream

Who does not like ice creams?

Sweet and cold, they can be so refreshing on summer hot days and a fun treat for kids.

But ingredients like milk, sugar, glucose syrup, emulsifiers and trans fats are not something that makes an ice cream attractive, right? So why not making your own?

This recipe here is full of healthy fats, gluten and lactose free plus you use dates to sweeten. And of course, super easy to make! You can make as Popsicle or use a bread loaf pan 😉 to make a 2 lb container.

Serving: 12 Popsicles or 2 lb


  • 3 cans full fat coconut milk

  • 12 pitted medjool dates

  • 3 tablespoons of 100% cacao

  • 3 tablespoons vanilla extract

  • 1 teaspoon ginger powder

  • 1 teaspoon of pink Himalayan salt

  • 1 cup of dark chocolate chips

How to make:

Using a blender, mix together the coconut milk, dates, cacao, vanilla extract, ginger and the salt.

Pour mixture into Popsicle containers or the bread loaf pan. Then add the dark chocolate chips into each container.

Set in the freezer for about 3 hours.

Note: When making a big container, the ice cream might get super hard. Before eating it, let out of the freezer for around 10-15 minutes. 😉
