Carrot, Zucchini and Potato Fritter

Feeling veggie today? ;) This lovely recipe is all about vegetables, precisely carrot, zucchini and potato. Besides being delicious it is so filing too. Yummy, yummy, here it goes:


Butter (melted, to grease)

2 teaspoons of olive oil

½ cup of grated carrot

½ cup of grated green zucchini

½ cup of grated potato (I used red ones, but also you can use sweet potato)

2 chopped onions

3 eggs

1/3 cup of grated cheese of your choice

1 tablespoon of brown rice flour or any other healthy flour

Salt and pepper

How to do:

Preheat the oven to 350 C and grease a cake pan with the butter, then cover it with baking paper.

Heat the olive oil in a saucepan over medium heat and the onions and cook for about 4 minutes and then add the other veggies and cook until they get soft, for about more 5 minutes. After that, turn off the heat and set aside for 10 minutes.

In a bowl mix the cheese, eggs, flour, salt and pepper and right after mix the vegetables.

Pour the mix into the cake pan with a spoon to make it even. Bake for about 15 minutes or until is lightly brown.

Remove from the oven and let it cool for about 10 minutes. Cut into squares and put on a plate. Done!
