Butternut Squash and Green Apple Soup


We know that during the cold months we crave for comfort and warmer foods and even sweet, right?


To go for a healthier option, I like to try soups, because they are exactly comfort, warmer and why not, sweet? ;)


My favorite at this moment is the classic butternut squash with green apples. Not only delicious, but so easy to prepare, this is kind of soup you never get tired and everybody likes.


This soup with butternut squash and green apple is perfect a combination for the detoxifying process, wonderful for the skin (hello natural anti-aging!) and also helps in the process of healthy weight loss giving a satiety response to the body.


Also, it has nutmeg and black pepper, which will spice the soup up and warm up your body helping with digestion too.


Eat with sourdough bread or a gluten-free or even with some Parmesan cheese on the top.

Are you ready? Here it goes:

Recipe for 4 full bowls

Ingredients:

  • 1 butternut squash, peeled and cut into pieces (Tip: protect your hands with gloves or paper towel, this squash is so sticky that glues your hands!)

  • 1 green apple, peeled and cut into pieces

  • 2 cups bone broth (you can use a vegetable one too)

  • ½ onion, sliced

  • 2 tablespoons olive oil or butter

  • Himalayan salt

  • Nutmeg

  • Black pepper


How to make it:

On a pan sauté the onion with olive oil or butter for about 5 minutes or until the onion gets transparent.

After, reduce the heat, add the squash and apple, stir a little bit and then add 2 cups of chicken broth, Himalayan salt, nutmeg and black pepper and cover the pan with the lid.


Let it cook for about 20 minutes or until it gets soft.

Then remove from the heat, let it cool a bit and blend it. If you want, you can add water in the blender.
