Berries Ice Cream

Eating is amazing. But I love being able to eat and still think about the benefits that that food can give to my health and well-being. And I still believe that we can eat everything, as long as we understand what is good for us and that unhealthy ingredients can be replaced by healthy foods.

This is the case with this berries ice cream recipe. Berries (and here you can choose the mixture you want) are rich in vitamin C and antioxidants that can reduce the signs of aging, such as dark spots or wrinkles. In addition, they protect the skin from damage caused by UV rays. Antioxidants and ellagic acid found in some berries (especially raspberries) can keep your skin healthy and rejuvenate it. Isn't it wonderful? A real beauty cream! Let's go to the recipe?

Ingredients (for 32 oz):

  • 2 cups of coconut milk (full fat)

  • 5 dates, pitted

  • 1 scoop or 1/2 cup of your favorite protein powder if possible without flavor or something like vanilla (I use Ancient Nutrition Bone Both Pure - Buy here)

  • 3 cups of berries (I used for this raspberry and blueberry)

  • 2 tablespoons lemon juice

  • 1 teaspoon lemon zest

  • 1 teaspoon vanilla extract


In a blender, blend the coconut milk, dates and the protein powder until well blended. Add the vanilla, berries, the juice and the lemon zest and blend again until well mixed. Place the mixture in a bowl for ice cream or any bowl for 32 oz and place in the freezer for at least 4 hours. Before serving, remember to take the ice cream out of the freezer at least 20 minutes before, as it tends to get hard. Suggestion: Serve this ice cream with the brownie made from zucchini. Delicious!
