Isn’t perfect when we can eat something sweet and yet healthy, gluten free, lactose free and low carb? This amazing muffin makes anybody happy (adults and kids!!) and it can be made with dark chocolate chips, like I made these ones, or you can add shredded coconut or cashews on the top. Mmmmm!
Bake them in morning for the breakfast (they can be made in 20 minutes!) or at night to eat in the morning. You can also make them for the kids lunch, for snacks at work or whenever you feel like having something sweet.
Let’s try it? ;)
½ cup flaxseed flour
½ cup almond flour (just blend the almonds)
1 tablespoon coconut oil
1 tablespoon raw honey or honey
1 tablespoon baking powder
Pinch of salt
How to make:
Preheat the oven in 350.
Mash the banana with a fork and then add all the ingredients in a bowl and mix well with a spoon.
Grease the muffin cups, place one scoop in each muffin cup and bake for 15 – 20 minutes.
Using small muffin cups you can make 9 muffins, otherwise, 4 big ones.
