This recipe is for those who enjoy a sweet, but made with no sugar. Who wants to eat a muffin, but with no gluten or lactose. And also, if you feel lazy to make anything complicated, this is easy-peasy. Let's do it?
Ingredients (for 12 muffins):
1-1/2 cup oat flakes (the oats are naturally gluten-free, but it could be crossbreed, so be sure it is gluten free!)
1/2 cup almond flour
1/3 cup coconut oil or olive oil
3 tablespoons chia seeds
1/2 cup raisins (optional)
1 - 1/2 tablespoon baking powder
How to make:
Preheat the oven to 350F degrees.
Blend the oats, eggs, bananas and the chosen oil in the blender until all blended. In a large bowl, place the almond flour, the chia seeds and raisins (if you want to use). Mix and add the dough from the blender.
Add the baking powder at the end, mix well.
Grease the muffins cups with oil used in the recipe. Put the muffin dough in the cups and bake for 25-30 minutes, checking after about 20 minutes if it is golden on top. Yum! :)
