Avocado Deviled Eggs

Super yummy and healthy recipe, these deviled eggs are filled with avocado and it is a great source of healthy fat and protein. ;)

I can’t lie to you and say it is super easy to make them, but definitely the hardest part is to remove the egg yolk and rest is just to have some patient filing the eggs.


Extra tip: eat them right away, as the avocado even with lime, tends to turn dark!

Let’s make it?

Ingredients:

  • 6 large organic and pasture-raised eggs, hard boiled

  • 2 medium organic avocados

  • 3 tablespoon fresh organic lemon juice

  • Himalayan pink salt, to taste

  • 1 teaspoon mustard

  • Paprika powder

  • 1 organic garlic clove, minced and cooked for 2 minutes

  • 1 tablespoon olive oil

Directions:

Peel the hard boiled eggs after cooling them.

Cut each hard boiled egg in half and carefully (this is the hardest part lol) remove the yolks. Separate them in a plate and add the yolks in a bowl.

In this bowl with yolks, add the avocado, lemon, salt, mustard, the cooked garlic and mash them together.

Use a spoon or like I used, a bag to fill the eggs with the avocado mix. Sprinkle with a little paprika and serve immediately.
