Apple, one of the most democratic fruits in the world. Delicious, sweet and easy to find anywhere, it is great to create healthy desserts and this one, wow, became my favorite!! It is also gluten and lactose-free.
Also, you can make it as cake. Just use a cake pan instead of muffin cups. ;) Let’s make it?
3 red apples (you can use green apple too)
2 cups almond flour
1 cup coconut sugar or any other natural sweetner that you like
½ cup coconut oil
4 tablespoon cinnamon
1 tablespoon baking powder
For topping, you can use coconut flakes, raisins, dark chocolate chips…
How to make (you make around 12 muffins or 1 cake):
Pre heat the oven to 350º.
Mix the dry ingredients in a bowl.
Peel 1 apple and cut into squares. Leave the other 2 apples with the skin and cut them into squares.
Blend the apples with skin with the wet ingredients (eggs and coconut oil).
Pour the wet mix into the dry one and the add the skinless apples squares. Mix well.
Grease the muffin cups or the cake pan with coconut oil. Pour the mix and bake for about 40 minutes or until the fork or thoothpick comes clean.
