Corn coconut bread

This period of the year in Brazil (yes, I am Brazilian ;)) it is time for a traditional celebration of the june month, something called “june party” (festa junina). Besides all the tradition, the music, the costume and the dance, one thing I love about it is the food, of course.

This month in Brazil is winter season, so this kind of food and also drinks, are warmer, comfy and sweet. But nowadays I make sweets in a healthy way, not only because it is low calorie (not all the time lol), but because it is healthy. Perfect for kids!

I made this corn coconut bread healthy version last week and I was really impressed by the amazing flavor and the easy to follow recipe. Actually who really made it was my step daughter, I just gave her the directions. Do you want to try it? ;) Here it goes!


2 cups rice flour

½ cup flaxseed flour

1 cup cooked corn

½ cup coconut sugar

½ cup sheered coconut

3 eggs

6 tablespoons coconut oil

1 tablespoon baking powder

How to do:

Pre heat the oven to 350o.

Blend the coconut oil, corn, eggs until well mixed.

In a bowl, mix the flours, the coconut sugar, the baking powder and the sheered coconut.

Pour the liquid mix into the dry one and mix well.

Grease a round cake pan with coconut oil and pour the mix.

Bake for about 25 to 30 minutes or until it gets brownish.
