Fruit Spring Pie


Today I went to one of the farm markets close to my house to check what they have new and good, and of course fresh. And guess what, they had fresh beautiful cherries which were from their trees! ;)


So I couldn’t avoid and I had to make a beautiful healthy pie, kids would love so my hubby (lol). But when I started making it I felt it would be great to add also raspberry, strawberries and peaches, all organic of course. Then this amazing organic fruit pie was created! Here it goes the recipe:

Ingredients:

Crust:

1/2 cup melted butter

2 tablespoons vanilla extract

1 cup coconut sugar (can be used honey or maple syrup)

6 tablespoons water

1 ½ cup almond flour (just blend the almonds)

1 ½ cup flaxseed four


Filling:

Berries and fruits you like, here I added cherries, raspberries, strawberries and peaches.

½ cup coconut sugar (can be used honey or maple syrup)

How to make:

Preheat oven to 425o F.

In a bowl mix well the butter, coconut sugar and vanilla. Then add the flours and water. Then press the mixture into a pie pan (the one you open on the side).

Bake the crust for 5 minutes in the oven and while you bake it, mix all the fruits, coconut sugar a little bit of water and cook for 5 minutes in a low heat.

Remove the crust from the oven and fill it with the fruits.

Put the pie back to the oven and bake for more 12 minutes or until crust is golden brown.
